These look a bit like what I've read about called Beefalo - literally a cross between a buffalo and cattle. There was an article a year or so ago I had read - a problem in the Grand Canyon due to the hybrid's causing issues.
Sharon, your guess is as good as any. If they are indeed highland cattle they are not "pure". As in the Angus breed there are(were?) both red and black versions, shaggy and short hair. There is one with white which leads me to believe they are "cross breed somethings". It has been a long time since my days on the farm and what we used to call "angus" in my youth might well be what is called "highland" cattle today. at least in the red
A couple of minutes ago I was flipping through the Dec issue of New Mexico magazine and saw a picture of "Rudolph the Red Nosed Yak" I checked Google images for Yak, and yup, I think that's what we're looking at.
